Great eats…

I love great bikes and good food! I am always looking for great eats to sustain my energy out on the trails. I don’t care much for the gu’s and energy drinks, but in times of emergency they do help. Our friend Jay (trials n errors) shared another great option.

Check out Jays world famous (well they are now if they weren’t already) all natural, organic granola bars! If you eat these you just may be able to do really cool tricks on your bike too, just like Jay!!! 😀

Jay’s Organic Granola Bar Recipe

2 heaping cups rolled oats (not instant)
¾ cup whole wheat flour
¼ cup wheat germ
½ cup unsweetened coconut flakes
1/2 cup natural maple syrup
1 teaspoon baking soda
¼ teaspoon salt
½ cup applesauce
½ cup honey or brown rice syrup
½ cup organic brown sugar
1 ¼ cup chopped unsalted peanuts
½ cup of almonds
2 eggs
1 – tbsp vanilla
¾ cup rice puffs
¾ cup wheat puffs
¼ cup flax seed
1 tsp cinnamon
1 cup raisins (chopped)
1 cup cranberries (chopped)
¼ cup of organic chunky peanut butter

Extras:

1 cup of dried fruit of your choice (If desired)
(BONUS – ½ cup of protein powder)

Add above ingredients in large bowl and mix well. (I found that wetting my hands and then mixing with my hands works best)

Preheat oven to 250 degrees

Line cooking pan with aluminum foil and spray with cooking spray.

Wet your hands and press mixture firmly into pan to a thickness of approx. ¾ inch thick.

Bake for ½ hour and then proceed to cover pan with aluminum foil and bake for an additional ½ hour.

While it is still hot, cut the desired lengths of the granola bars.

Let stand until it is completely cool or they will fall apart.

I normally put them in zip lock bags and freeze them until I’m ready to eat them. They taste great cold!
