How do you do this for a 29er tire?
Same way. You probably could get away with using a 26″ tube. But I figure the 29″ would be a better fit.

I guess I am a little lost on the benefits of the tubeless tire. As I see it if you get a flat it would seem to be more complex and time consuming to change this tire and a tube tire. What am I missing?

Benefits is if you get a thorn, you simply remove it and keep riding. The tire sealant will seal any punctures you have. Plus you have an added benefit of superb handling when using tubeless.
